Tổng hợp các tài liệu khoa học xung quanh khái niệm Hệ thống thực phẩm. Hệ thống thực phẩm khái quát sự liên kết giữa các khâu sản xuất nông sản, chế biến thực phẩm, phân phối và tiêu dùng. Thị trường nông thực phẩm không phải là một thị trường hoàn hảo. Cách tiếp cận qua hệ thống cho phép nhìn thấy những khiếm khuyết của thị trường này. Đặc biệt, hai vấn đề vĩ mô lớn nhất khi các chủ thể kinh tế chạy theo lợi nhuận là vấn để sức khỏe con người và biến đổi khí hậu. Cải thiện hệ thống thực phẩm để giải quyết hai vấn để này nhưng vẫn đảm bảo an ninh lương thực, dinh dưỡng là thách thức của các quốc gia trong tương lai. Tại Việt Nam, tiếp cận hệ thống thực phẩm cần được ưu tiên vì ba chương trình lớn (1) duy trì an ninh lương thực, dinh dưỡng (2) đảm bảo an toàn thực phẩm và (3) thích ứng với biến đổi khí hậu. Nhưng các nghiên cứu hiện tại chưa có nhiều. Việc kết nối chúng để có cái nhìn toàn cảnh ở cấp quốc gia là một việc làm cần thiết.

This paper reviews the scientific literature over the concept of food system. The food system has been difined as the link among agricultural production, food processing, distribution and consumption. The food system is built f-rom 4 components farming, food processing, food distribution and consumption. The market of agro-food products is not perfect. A systemic approach allows to observe its failures. In particular, two most preoccupying problems when food operators pursuit their own interest are bad impacts of food on public health, and the climate change that goes with the destruction of our ecosystem. Changing the food system to deal with the problems while ensuring food security is a challenge of many countries in the future. In Vietnam, the food system approach should become a priority because of 3 issues (1) to maintain the food security (2) to ensure food safety and (3) to adapt with climate change. But studies on the issues are still limited. Connecting researchers and databases to handle nationally the problem is a necessity.
