Extracellular polymeric substances (EPS) are known to be a compound that has the ability as a prebiotic to promote the growth of beneficial bacteria in the intestinal tract of humans and animals. To demonstrate the prebiotic potential of EPSs produced from lactic acid bacteria, Lactobacillus plantarum and Bifidobacterium bifidum, this study evaluated the effects of these bacteria on the immune response in shrimp to infection with pathogenic bacteria. The results showed that the diets supplemented with different types of EPS stimulated the immunity of black tiger shrimp against acute hepatopancreatic necrosis disease (AHPND), also known as early mortality syndrome (AHPND). The addition of EPS to shrimp feed significantly increased the total white blood cell count, acute respiratory failure activity, phenoloxidase (PO) and superoxide dismutase activity. The results show that EPS produced by lactic acid bacteria has the potential as a prebiotic, which can become an alternative to the use of antibiotics in shrimp farming to inhibit the growth of pathogens.
