Cocoa is a growing crop in Vietnam in recent years. It is the main raw material in processing with two main products, cocoa powder, and chocolate, in which cocoa powder is a healthy nutritious drink and is in high demand. To process cocoa powder, it is necessary to crush cocoa cake, which is the product obtained after high pressure to remove the butter in cocoa mass. However, cocoa butter melts very easily at 340C - 380C, and so if the crusher generates high temperature (> 340C), the cocoa powder cakes will be pasty, lumpy, and unable to separate through the mesh to processed into powder. A model of cocoa cake crusher has been designed and manufactured. Machine performance indexes and tested working parameters include hardness, moisture, cocoa cake volumetric weight, cocoa powder fineness, and machine productivity. Experimental results show that the machine has achieved the economic and technical criteria for cocoa powder production such as productivity of 295kg/h, quiet, stable operation, and easy cleaning. The fineness of the powder after crushing is greater than 97% when it is separated through a 50 µm mesh creen. Some cocoa cake parameters as data for the study are also presented.
