To study the effect of xylanase in the hydrolysis process of xylan from the cob to get xylose sugar with the highest levels. The study results showed that the hydrolysis of xylan by Xylanase in conditions: Temperature 45°C; Time 8 hours; pH 4.5; The concentration of Xylanase 40ul; Substrate concentration 20g/l. The initial solution of xylan with a reducing sugar conknt was 31.24 mg/l, and after continuing treated with Xylanase, the reducing sugar content was 77.16 mg/l. This proved that Xylanase have significant impact to the hydrolysis. This is a right step contributing to creat the xylose sugar funtions. They bring many benefits with the health of consumers and contribute to reducing environmental pollution because of agricultural waste (cob).
