The objective of this study was to detennine the optimal technical parameters to obtain the highest DNJ extraction perfonnance from the mulberry Que crop is widely grown in Vietnam. DNJ compounds were extracted from the mulberry leaves, Que crop is grown in Thai Binh province, Vietnam with 30 percent ethanol solvent was acidified with acetic acid (with the concentration is 1 percent). Research in the process of extraction temperature, time and the rate of dried mulberry leaves per various solvents to determine the optimal technical parameters for the DNJ extraction process. Research results show the most effectively potential for extracting DNJ from mulberry leaves is when the extractiop is conducted in the following optimal conditions; The rate of solvent/material 15/1, in the extracted time: 26 hours and a temperature at 43°C. With these conditions the DNJ extraction efficiency will be reached 80 percent.
