Nghiên cứu tổng quan những vấn đề lý luận và thực tiễn nhằm sáng tỏ những lý luận về nhu cầu tiêu dùng thịt lợn an toàn sinh học, làm cơ sở cho nghiên cứu thực nghiệm về nhu cầu tiêu dùng thịt lợn an toàn sinh học tại Việt NamVề mặt lý luận, nhu cầu tiêu dùng thịt lợn an toàn sinh học hướng tới các mục tiêu kép về an toàn thực phẩm, bảo vệ môi trường và an toàn dịch bệnh. Bên cạnh đặc điểm người tiêu dùng, khả năng tiếp cận và nhận diện, các nguyên tắc chăn nuôi an toàn sinh học tác động đến những kỳ vọng của người tiêu dùng về sức khỏe, môi trường và dịch bệnh sẽ ảnh hưởng đến nhu cầu tiêu dùng thịt lợn an toàn sinh học. Về thực tiễn, gần đây, sản xuất thịt lợn an toàn sinh học đang có xu hướng ngày càng phát triển với sự gia tăng của tỉ lệ trang trại an toàn sinh học và hộ chăn nuôi an toàn sinh học. Tuy nhiên, các nghiên cứu trong giai đoạn này về nhu cầu tiêu dùng thịt lợn an toàn sinh học còn rất hạn chế. Chính vì vậy, để phát triển tiêu dùng thịt lợn an toàn sinh học, cần thiết có tổng kết những lý luận và thực tiễn về nhu cầu tiêu dùng để có thể nhận diện và đề xuất các giải pháp hữu hiệu nhằm phát triển sản xuất và tiêu thụ thịt lợn an toàn sinh học.

In our research, theoretical and practical issues on consumer demand for biosafety pork in Vietnam were overviewed systematically. Theoretically, biosafety pork consumption approachs the dual goals of food safety, environmental protection and infectious disease safety. Adding to the consumer c-haracteristics, the accessibility and identification, consumer preference for biosecurity principles with health, environment and disease protection can affect the demand for biosafety pork. The biosafety pork production has been developing with an increase in the proportion of biosecurity farms and households. However, current researches on the demand for biosafety pork are quite limited. Therefore, in order to develop biosafety pork consumption, it is necessary to have scientific researches to further evaluate consumer demand and to identify and propose solutions for market development and production of biosafety pork.
