The objective of this research was to determine the appropriate moisture content of Ly Son garlic with the aim of prolong post-harvest preservation of type of this specialty crop. The results showed the initial moisture content suitable for preservation purposes for Ly Son garlic were 60-65 percent. And this initial moisture had prolong post harvest preservation that were above 6 months. In addition, when Ly Son garlic were preserved in this moisture; variation in quality, natural weight loss and deterioration of them were occured slowly (the rate of deterioration were less than ten percents (10 percent) after 8 months).
