Polyphenol with activities (total antioxidant, reducing power and free radical scavenging DPPH) of maize were focused on research. Husk, roots of maize and corn silk were used as the sources of polyphenol with antioxidant activities. The research showed that, polyphenol content with antioxidant activities in maize husk are the highest. Polyphenol with antioxidant activities from husk of maize were efficiently extracted using water with solvent-to-material ratio of 60/1 (v/w) during 32 hours at 60oC. This polyphenol extract could be absolutely used into the functional drink.
