Research on setting up crushing and fermenting the black tea production technology in Vietnamese equipment not only displays internal force of engineering branch but also helps companies can apply easily to their producing condition and produce products with higher quality, more stable, safety and hygiene. The article also presented the most suitable parameters for crushing technology and fermenting technology. The quality mark of tea made from type B, C and D are 18.0 and 16.0 respectively and at fair level.
